Prepare Foil Packets: Cut two large sections of heavy-duty aluminum foil, approximately 2 feet in length each. Layer one sheet on top of the other, and fold the edges together to create a double-layered base. Drizzle olive oil in the center of the foil, leaving ample space (4-5 inches) on each side for sealing. Arrange a generous portion of the vegetable mixture over the oiled area, then season liberally with curry powder, salt, and pepper. Spoon a generous amount of vegetable broth over the vegetables.
