In a bowl, combine the cubed sweet potatoes with olive oil, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper. Ensure the sweet potatoes are evenly coated. Spread them in a single layer on a baking sheet.

Bake in the preheated oven for 12 minutes, then stir and flip the sweet potatoes. Return to the oven and continue baking until tender, approximately 10 to 12 more minutes. Taste and adjust seasoning with additional salt if needed.

Lay one tortilla on a flat surface. Sprinkle 1/2 cup of Cheddar cheese over one half of the tortilla. Top with generous scoops of the roasted sweet potatoes and black beans. Spoon 2 tablespoons of salsa over the beans and potatoes, then sprinkle 1/2 cup of Monterey Jack cheese on top. Fold the tortilla over the filling and gently press down.

Heat a large skillet over medium heat until hot.

Place the quesadilla onto the hot skillet without any oil. Cook until golden brown and crispy, about 2 minutes. Carefully flip the quesadilla and continue cooking for another 2 minutes until the second side is also golden brown. Repeat with the remaining ingredients until all 4 quesadillas are prepared.

Slice each quesadilla in half. Serve with dollops of sour cream, a sprinkle of fresh cilantro, and additional salsa, if desired.

For extra flavor, try adding a pinch of smoked paprika to the sweet potato spice mix.
To prevent the quesadillas from sticking, ensure the skillet is hot before adding them.
