Follow The Directions

01

Step

In a medium saucepan, combine water, rice, and sazón seasoning. Bring to a boil over high heat. (2 minutes)

02

Step

Reduce heat to low, cover, and simmer for 15 minutes. (15 minutes)

03

Step

Remove from heat and let stand, covered, for 10 minutes. This allows the rice to fully absorb the moisture and become fluffy. (10 minutes)

04

Step

Stir in the drained hominy, cilantro, and green onions. (2 minutes)

05

Step

While the rice is cooking, fill a large saucepan halfway with cold water and bring to a boil. (5 minutes)

06

Step

Using a slotted spoon, gently lower the eggs into the boiling water. Reduce heat to maintain a gentle boil and cook for 8 minutes for jammy yolks. (8 minutes)

07

Step

Remove the eggs with a slotted spoon and let them cool slightly. Once cool enough to handle, gently tap the eggs on the counter and carefully peel off the shells. (5 minutes)

08

Step

Halve the peeled eggs. (2 minutes)

09

Step

In a small saucepan, combine the black beans, sofrito, and salt. Heat over medium-low heat until warmed through, about 3 minutes. (3 minutes)

10

Step

Divide the rice and bean mixtures evenly among 6 bowls. Top each bowl with halved jammy eggs and a sprinkle of cracked black pepper. (5 minutes)

For an extra layer of flavor, consider adding a drizzle of high-quality olive oil over the finished dish.
If you prefer a firmer yolk, increase the boiling time for the eggs to 9 or 10 minutes.
Freshly made sofrito will elevate the flavor of the beans significantly. If you have the time, consider making your own.
Adjust the amount of black pepper to your preference.
Feel free to add a dash of hot sauce for extra heat.
