Serve the chicken and sauce over rice, quinoa, couscous, or mashed potatoes. It's also delicious with steamed or roasted vegetables like broccoli, green beans, or asparagus. Feel free to experiment with different types of preserves. Peach, orange, or even pineapple preserves would be delicious substitutes for apricot. To add a little heat, stir in a pinch of red pepper flakes or a dash of hot sauce to the sauce mixture.
